eugh. hot salmon is an abomination, and hot salmon with cheese sauce doubly so. wonderer, how could you?

the only way to eat it is lightly poached, cold, with mayonnaise and a cucumber salad. or smoked, of course.

It's best served flaked, on top of a diced potato and brie bake with curly kale jacket. It can be coated in warmed Mary Berry's Lemon & Thyme sauce which is best with prawns in.

Last meal before Mrs Wonderer returns from her week away (and amazingly I haven't spent my week in an orgy of BDSM play clubs!) and I've treated myself to a lovely piece of fresh salmon fillet; a favourite but something she doesn't eat so I rarely buy it in the normal course of thing.

Any suggestions for something nice (but not over-elaborate) to do with it? It'll be okay just fried, or perhaps poached in some milk and served with a sauce made from the milk ... but maybe someone has a better idea?

Bit late replying but next time try wrapping in puff pastry - Salmon Wellington - delicious!

Thanks for the suggestion; in fact thanks to all contributors for recipe thoughts.

I considered Wellington but didn't have any ready made puff pastry and didn't have time. I agree it's a nice way to do it though.
