Simple recipe suggestions - salmon (19)

Last meal before Mrs Wonderer returns from her week away (and amazingly I haven't spent my week in an orgy of BDSM play clubs!) and I've treated myself to a lovely piece of fresh salmon fillet; a favourite but something she doesn't eat so I rarely buy it in the normal course of thing.

Any suggestions for something nice (but not over-elaborate) to do with it? It'll be okay just fried, or perhaps poached in some milk and served with a sauce made from the milk ... but maybe someone has a better idea?

Poached in milk with dill in it, have it with mash using some of the milk in the mash

You could bake it wrapped in foil and a squeeze of lemon to finish or a hollondaise sauce.Enjoy!

Thanks for suggestion. The Hollandaise sounds lovely but a bit ambitious.

Something to try next time is serving with a few capers as they give a sour kick to fish and seafood such as crab or lobster with a salad.

Next time? I haven't done this time yet. Yes, you're right; something sharp makes a nice contrast, even if it's as simple as a slice of lemon. Capers are wonderfully pungent; have used them in fish pie but never with salmon.

Late dinner tonight; I have to postpone my evening so I'm still awake up to about midnight.

Probably time to get cooking soon though.

Salmon is one of my fave dishes.

I keep it pretty simple: lots of ground black pepper, cover it with slices of lemon, wrap in foil, bake in the oven.

To go with it: mediterranean vegetables (courgettes, red onion, peppers, baby toms, etc) roasted in olive oil and spices + provençal potatoes + a nice glass of vino.

Jeez I'm so hungry now!

I'd go for this

But I would serve it with new potatoes or Uncle Ben's lemon rice, and with wilted spinach with garlic.

Thanks all for ideas. I poached it in some milk and then, keeping it warm in the over, made a white sauce with the poaching milk, adding some very ripe brie and basil. yummy :-)

sounds lovely, maybe next time tray bake it with vine tomatoes, a lemon cut in half and a touch of balsamic...it's glorious!
