Just the same as no research exists on the influence of alcohol on drivers, (We could not test drunks on the road).

There is loads of scientific evidence of the effect of alcohol on driving performance. Field tests are not the only type of study available. Many psychological tests can demonstrate sensory and cognitive impairments after alcohol, and other studies can identify correlations between sensory and cognitive abilities (e.g. reaction time) and driving performance.
