It is one of the easiest things to cook but can I do it?? Nope!
M made me a lovely one the other evening so I was asking him how he did it because mine always break up and look a shrivelled mess in the pan. Now and again I do a good one but the majority end up in the damn bin!
I decided to have a nice mushroom and red onion one today for lunch so did everything He said. I could see it was seriously NOT going to turn over without breaking up yet again so I had 2 spatulas doing my best but no.. disaster again. Brown and shrivelled up skanky mess in the pan!
I don't have a clue what I am doing wrong 
How do people get them so light and fluffy??
On the plus side I have discovered turkey rashers.. lower fat means more points on my diet and they are bloody yummy!! Mind you, pretty much everything is yummy right now!

i put the grill on and then shove the omlette under that it makes it uffy fluffy n light
only for a few secs thou and make sure the top of omlette aint cooked completely.
failing that.....
hes just scored himself his own lil task lol  i'm in the business of misery...lets take it from the top

Yes I've heard of the grill thing I will try that next time thanks 
I quite like the second suggestion though sounds good to me. He does most of the cooking actually when He's here because it is certainly not my strong point lol!

I'm glad it isn't just me then.
I always make sure I buy loads of eggs so when the damn things end up in the bin I do the scrambled egg option too  Vanilla sex is like a 99 ice cream - without the flake (me)

the only vix way to omellete
turn grill on
mix 3 eggs in a jug with a dash of vinegar and beat well
add a good dash of milk
heat pan with NO oil on high
remove from the heat
add a spray of oil or a tiny bit
with paper towel spread
pour the ommy mix into the pan
with spatula loosen the edge
add your ingredients of chioce, peppers, cheese herbs
when the mix looks set but wobbly on top
shove pan undergrill
watch the bloody thing all the time
it will rise n be fluffy

That sounds good vix,
Will have to invest in a new frying pan though if I am going to go oil free because mine has given up being non stick. I've been using that spray oil for less calories but have to use tons because it doesn't work.
I've heard of the dash of vinegar thing, must try that out.
I was told to use only egg whites once for less points and less fat so tried that but it was gross and Mr Bin enjoyed that one!
