Chicken in cider and mustard
Will serve 1 dom and 1 sub
Ingredients
2 tbsp olive oil
1 large onion roughly chopped
1 eating apple peeled cored and chopped into approx 12 slices(optional)
6 skinless boneless chicken thigh fillets
2 level tbsp plain flour
300 ml good quality cider
1-2 level tsps dried thyme
2 heaped tsps whole grain mustard
Directions
1) Heat the oil in a large frying pan then add the onion and apple (if using). Fry over a moderate heat until both are browned
2) Push the apple and onion to the sides of the pan so there is plenty of space in the middle. Unroll the chicken thighs and fry flat in the pan for between 5-10 minutes turning over occasionally until cooked through.
3) Sprinkle the flour over the chicken, onion and apples and stir so everything is evenly covered. Depending on how thick you think you will like the sauce add more or less flour than stated above.
4) Pour the cider into the pan and stir well. Then add the mustard and thyme. Bring the sauce to the boil then simmer. for 10-15 mins until the sauce reaches your preferred consistency. Add a splash more cider if required.

This goes well with any kind of potato, carrots and any kind of green vegetable. It's also been suggested that replacing the chicken with pork fillets would work a treat.
